Itchy mouth especially the roof and the back

Question:
please help, I can not bare it any longer, every night and sometimes during the day the roof of my mouth is always itchy.It actually wakes me up at night, it`s that bad. I been to my GP about this matter but she seems to feel it`s nothing.What is causing this, Help ? I`ve changed my bed covers, drink water to ease the itching, tried all sorts of things, but nothing helps.
