Question:

For sugar-free dishes, what ingredients can I substitute for buttermilk, vanilla extract, and buttermilk?

Answer:

Thanks for your question.  To substitute buttermilk, you can use 1 cup of skim or 1% milk with 1 Tbsp. white vinegar, lemon juice or plain yogurt added in.  But, if you have buttermilk, go ahead and use it in the recipe as substituting the above ingredients will not really reduce the sugar content since all milk contains the sugar lactose.

Vanilla extract contains an insignificant amount of sugar and should be used "as is" in recipes.  There is not a substitute.
