Food combinations

02/08/2010

Question:

Which foods are considered acid, and which alkaline, and would combining foods from each group aid digestion

Answer:

Combining acid and alkaline foods will not affect digestion. All foods are digested, absorbed, and metabolized in a very similar fashion, regardless of acid or alkaline content. Metabolized foods may release either an acid or an alkaline base (bicarbonate) into blood. An alkaline diet is a diet that emphasizes fresh fruit, vegetables, roots and tubers, nuts, and legumes. Acid foods are considered meats, grains, fish, poultry, shellfish, cheese, milk, and high salt foods. The theory behind the alkaline diet is that our diet should reflect the pH level of the blood and be slightly alkaline. Proponents of alkaline diets believe that a diet high in acid-producing foods is disrupts this balance and promotes the loss of essential minerals such as potassium, magnesium, calcium, and sodium, as the body tries to restore equilibrium. There is evidence that alkaline diets may help prevent the formation of calcium kidney stones, osteoporosis, and age-related muscle wasting. However, most conventional doctors do not believe that an acid-producing diet is the foundation of other illness, per se. Fish, whole grains, poultry, low-fat cheeses and milk, and other lean cuts of meat may be part of a balanced diet that will benefit health. Americans are encouraged to eat more fruits and vegetables and consume less meat, salt, and refined grains to meet US Dietary Guidelines and prevent chronic illness like heart disease, stroke, diabetes, and cancer.
